We’re going vegetarian this week!

Monday: Butternut Squash with Garlic, Sage and Pine Nuts, served with penne. (Recipe from RecipeGirl.com)

Tuesday: Potato and Autumn Vegetable Hash, from Epicurious.com

Wednesday: Mujadara, from VegetarianTimes.com

Thursday: Chickpeas with Tomatoes and Spinach, served with rice.

Friday: Naan pizzas with grilled veggies and goat cheese.

    Yay!!! I tried to jump back into the vegan thing, but it wasn't happening like I envisioned. I made a massive salad, got halfway through and told my husband I couldn't finish it because it needed ranch, lol, creamy milky ranch! I skipped the ranch and skipped the rest of the salad. I maintained the vegan thing for three or four days but then yesterday I made chicken salad sandwiches for the fam and couldn't resist, well, I could have but didn't want to! So I think I'll be mostly vegan with a dash of meat here and there (is that a flexotarian or s/t?) until this pregnancy thing is done, and I can palate my raw veggies again. Oh and the naan pizza sounds sooooo good, I love naan and never thought of using it for pizza, though I will ditch the cheese, yes, I will resist! ;)

    i'd call it flexotarian! LOL. I think all bets are off during pregnancy… your body will tell you what it needs and wants, and you have to listen!
